In the morning -
Bring in all the ripe tomatoes
and basil, rosemary and thyme that
the summer
left for you to enjoy.
Or grab some at a farmer’s market or the store -
that works too!
Arrange them on a pretty pan
with herbs, garlic, a spoonful of sugar,
and sprinkles of salt, pepper and red pepper flakes.
Then drizzle it all with olive oil.
Roast it until it feels right.
In the afternoon-
Puree the cooled tomatoes and simmer
with a little parmesan (maybe cream
if you’re craving something richer?).
Make some ricotta cavatelli pasta
and chill the dough.
In the evening-
Pour a glass of wine
and hand roll the pasta.
(I like to listen to music or watch
a show while I work).
After dinner put the extra sauce
in a mason jar in the freezer
for a winter night when there
are no more tomatoes
and you don’t feel like cooking.
